New Discoveries in Toxins from Campylobacter

Many microorganisms produce toxins in foods, with bacterial toxins being the most common and effective. Bacterial intoxication, such as that caused by Campylobacter, is currently considered one of the most prevalent gastrointestinal infections affecting humans through food in many countries. Common transmission methods include consuming contaminated food sources, especially undercooked chicken and food varieties tainted by raw chicken. Additionally, drinking polluted water or milk, often unpasteurized, and having contact with animals, particularly livestock like cows and chickens, as well as domestic cats and dogs, are effective transmission pathways. Campylobacter bacterium globally cause bacterial gastroenteritis by producing virulence factors, resulting in bacterial poisoning when ingested through contaminated sources like undercooked chicken, unpasteurized milk, and feces-contaminated water. Symptoms include diarrhea, stomach discomfort, and fever. In severe cases, Guillain-Barré syndrome and reactive arthritis may occur. Proper food hygiene practices are essential in preventing Campylobacter infection. This poisoning was identified in the year 1976 A.D., with most cases of Campylobacter poisoning (approximately 31%) being sporadic. Group outbreaks are rare, but individual and familial instances of poisoning, particularly at the household level, can occur. The alimentary canal and udder of animals serve as sources of the Campylobacter jejuni microbe. Reports have indicated that this microbe is found in the gastrointestinal tract of about 50–15% of apparently healthy cows, resulting in low numbers of Campylobacter in raw milk.
