Given the diverse structural classes to which flavors and fragrances belong, they present a complex and intriguing focus for both academic and industrial research endeavors. This section aims to provide an overview of the formation of aroma and flavor compounds, shedding light on the intricate biochemical processes involved in their synthesis.
