An overview of microwave-assisted drying and its potential for enhanced food processing. An in-depth analysis of the advantages and challenges associated with microwave-assisted drying emphasizes the necessity of advanced computational approaches to improve the effectiveness and calibre of the procedure. It further provides a comprehensive review of the mathematical models that describe the physics of microwave drying and various numerical techniques used to simulate and optimize microwave-assisted drying. The chapter aims to increase our comprehension of the physics of microwave-assisted drying and develop better strategies to optimize the process. Ultimately, the findings of this study can pave the way for more efficient and effective food processing and preservation techniques. Furthermore, the chapter provides insight into the current state-of-the-art methods in microwave-assisted drying and their prospects. The findings of this study suggest that advanced computational approaches have the potential to significantly enhance the efficiency and quality of microwave-assisted drying, leading to improved food processing and preservation.
