Application of Metagenomics in Dry Fish Microbial Quality Assessment
摘要
Over the past decade, the utilization and investigation of microbes in dry fish have gained significant attention. Metagenomics, a relatively recent subdiscipline of genomics, has emerged as a promising scientific tool for analyzing microbial communities through metagenomics DNA analysis. However, despite its tremendous potential, metagenomics has yet to be widely embraced in certain agro-industrial fields like fisheries and aquaculture. This chapter aims to shed light on some of the prospective applications of metagenomics in the context of the fisheries industry, specifically focusing on the microbial diversity and dynamics associated with dry fish. The potential uses of metagenomics in unveiling the richness of microbial diversity, understanding microbial functions, enhancing safety protocols, and ensuring the quality of dry fish products.
