Microalgae Superfoods

The demand for healthy foods and a balanced diet has increased the consumption of functional foods. Superfoods are foods that contain one or more ingredients with higher nutritional and energy value than that of traditional foods. These products have been associated with health promotion, well-being, and quality of life. In this scenario, microalgae are gaining prominence since they contain several compounds with biological activity. These microorganisms are a natural source of bioactive compounds, such as vitamins, essential amino acids, polyunsaturated fatty acids, minerals, carotenoids, enzymes, and fibers. These compounds contribute nutraceutical, anti-inflammatory, anti-aging, hypocholesterolemic, antioxidant, immunosuppressive, photoprotective, and neurotransmitter activities to the microalgae biomass. Given this, the objective of this chapter is to present the benefits and use of microalgae as superfoods, especially Spirulina and Chlorella, also addressing the relevant nutrients related to the benefit of the addition of microalgae in the diet and the scenario of microalgal biomass production for human consumption.
