Post-Conquest Early Changes in Phyto-cultural Systems from the Analysis of Food: A Synthesis for the Argentine Arid Diagonal with Emphasis on the “Gobernación de Tucumán”—Governorate of Tucumán

摘要

From the perspective of the studies of food immerse in phyto-cultural systems we evaluate the trajectory of ingredients and culinary preparations, as well as the potential resignification of their cultural meanings, during the early colonial period of the Gobernación de Tucumán and neighbouring areas. Two kinds of evidences were methodologically taken into account: written documentary sources and archaeobotanical remains. Results show the incorporation of Old-World plants within natives’ groups as well as of American species between Spaniards. Consequently, in the end, the paper provides a better understanding of the conquest and colonization events which lead to a resignification of food, new mixtures, tastes and flavours in the study area.
