Exploring Global Dietary Data Gaps in Relationship to Nutrition Inequity: A Case of Sodium Intake

Adequate dietary intake plays an important role in fostering growth and preventing diseases. Understanding dietary needs at both local and global levels provides valuable insights for various stakeholders, including researchers, policymakers, public health practitioners, and healthcare professionals, guiding informed dietary decisions. In this chapter, we explore the critical role of adequate dietary intake in promoting human health and preventing diseases, with a special emphasis on sodium intake as a key dietary component. Despite the global recognition of a healthy diet as fundamental to well-being, achieving optimal nutrition remains challenging due to various factors, such as food insecurity, unhealthy lifestyle behaviors, and environmental changes. Moreover, information on dietary intake is limited, inconsistent, incomplete, or outdated. We detected substantial discrepancies in existing global dietary data sources, revealing knowledge gaps in terms of dietary data collection and factors contributing to the availability, completeness, inconclusiveness, consistency, and up-to-date accuracy of nutrition intake data. Specifically, we focused on two levels of databases: individual-level dietary intakes from the National Health and Nutrition Examination Survey versus the China Health and Nutrition Survey, and population-level intakes from the Global Dietary Databases versus the Global Burden of Disease. These databases are among the most complete and comprehensive repositories of relatively granular intake estimates. As we systematically compared the content of nutrition databases, we highlighted populations for whom dietary records are sparse and countries with limited resources to conduct nutrition monitoring and adhere to established reference levels and recommended thresholds for key food groups and nutrients. Throughout this chapter, we offered a deeper understanding of the essential roles the global data repositories play in shaping our comprehension of global nutrition dynamics. By investigating the intricate dimensions of dietary data, we underscored the urgent need for standardization and harmonization of data collection and analysis. These improvements are crucial to bridge gaps, reveal existing disparities, and provide insights into opportunities for enhancing nutrition surveillance and public health efforts on a global scale, thereby addressing the pressing issue of global health inequity.
