摘要

Starch nanomaterials (SNMts) are an attractive alternative to food packaging additives due to their biodegradability, renewable nature, and biocompatibility. The current chapter reviewed the use of starch SNMts in packaging applications. Starch nanocrystals (SNCs) and starch nanoparticles (SNPs) have been the main SNMts used in packaging applications. SNMts have been used to improve packaging properties, such as barrier properties (water vapor and gases), mechanical strength, and moisture resistance. Furthermore, these materials can be used to control the release of active compounds for food preservation.
