Valorization of Jackfruit Waste into Bioactive Peptides and Nutraceuticals

Disposal of solid waste, including agro-industrial waste, is a significant concern in developing nations and these wastes are abundant sources of structurally varied bioactive nitrogenous components. It has been discovered that the jackfruit, Artocarpus heterophyllus, is typically abundant in tropical and subtropical regions, mostly found in India, Bangladesh, Sri Lanka and the tropical rainforests of Indonesia, Philippines, Malaysia, and Australia. has a number of beneficial compounds that can be explored. The accumulation of bio-waste or agro-waste is an unsettling complication for the environment that surrounds the disposal of fruit components that aren't used, jackfruit waste parts such as the peel, perianth, rind, outer core, etc. are such examples. It has substantial protein content, making it a source for the production of nutraceuticals and bio-functional peptides. Protein fragments known as bioactive peptides are advantageous to human health and possesses numerous anti-cancerous, antidiabetic properties. The bioactive peptides with protein origins that were found in jackfruit wastes are summarised in this book chapter. It also emphasises the possibility of using the proteins produced from these wastes as a source of bioactive peptides. This chapter discusses several currently available products that contain bioactive protein hydrolysates and peptides, as well as contemporary technologies utilised in the manufacture, fractionation, and purification of bioactive peptides.
