Soil Management Practices, Pruning, and Harvest of Olive Groves

The cultivation of olive trees in Morocco is characterized by a great diversity of practices, techniques, and traditions variable and transitional between the different regions of the country. In this text, we retain that the olive trees, apart from the intensive crops that are beginning to invade the plain, remain a source of life for farmers, including small farmers in the mountains and plains. Indeed, in the latter context we present techniques and practices of olive tree cultivation as well as the process of valorization of the olives “from the tree to the table.”
