Swedish Coffee

This chapter explores the origins and establishment of Swedish coffee (Astragalus boeticus L.) as a substitute for coffee in the early nineteenth century. This Astragalus coffee came from the times when coffee was still considered a luxury item and before coffee became commonplace throughout Swedish society. The analysis shows the manner in which business was conducted throughout the years of the last prohibition on coffee imports (1817–1822) and also discusses coffee replacement in everyday life. The origin, cultivation, and ultimate demise of this plant are the primary topics covered here. The fact that Astragalus coffee was popularized as a coffee substitute drink quite early in Scandinavian settings receives attention: Sweden is the primary interest, but ties with Denmark and Norway are brought into this story.
