Application of the Big Data and VSM for the Greening of an Agri-Food Supply Chain

We propose, in this paper, an approach that contributes, to a limited extent, to the greening of an Agri-food industrial supply chain by monitoring these losses and excessive consumption. This approach is based on VSM model and the application of a set of concepts and tools belonging to Industry 4.0 (Espacialy BigData), it’s also focused on a prior identification of consumption levels and environmental impacts of all the components of the supply chain. These sources of consumption and impacts are then monitored via a set of sensors and connected objects that measure, in real time, the quantities of raw materials, water and energy consumed by the supply chain as well as the associated impacts.
