Mountain Cuisine in a Changing Climate: The Resilience of Traditional Himalayan Food Systems

Ethnic food systems across the globe have been shaped by the local community’s indigenous knowledge, cultural practices and ecological conditions. However, with the changing climate, these traditional food systems increasingly face various challenges affecting food and nutrition security. Climate change profoundly impacts the local environment, affecting the availability and quality of traditional food systems. Rising temperatures and uneven precipitation patterns have led to changes in the phenology of traditional crops, affecting the availability of traditional foods. This article aims to explore the diverse traditional food systems of the Uttarakhand Himalayas in the context of the changing climate and its implications on food and nutrition. Unique mixed farming practices such as the Baraanaj system, traditional preservation and value addition techniques, and well-balanced diverse food plate with vegetables, dairy, and meat have played a vital role in adapting to the changing climate while maintaining nutritional security. However, traditional food systems face several challenges due to climate change and anthropogenic activities. The chapter discusses how the communities’ indigenous knowledge, farming practices, and traditional food systems can play a crucial role in building resilience to the impacts of climate change. It also examines the importance of traditional food systems as an agricultural heritage and their potential role in mainstreaming nutrition security. Knowledge and understanding of traditional food systems and further development and validation of indigenous wisdom can help develop local and national adaptation strategies with community participation. Learning from the existing wealth of indigenous knowledge coupled with modern science can pave a clear path for achieving Sustainable Development Goals (SDGs) regarding zero hunger, good health and well-being, sustainable communities, and climate action.
