Diet Effects on Metabolic Enzymes

In the metabolism of foreign compounds, activation enzymes catalyze the functionalization of chemicals to generate reactive intermediates or metabolites, such as heterocyclic aromatic amines and polycyclic aromatic hydrocarbons, which are formed in meat grilled at high temperatures. Such metabolic activation reaction is followed by detoxification enzyme-catalyzed conjugation or non-conjugation reactions to detoxify reactive intermediates or metabolites so as to facilitate their excretion from the body.
