Temperature Control in Wine Fermentation Using Programming in LabVIEW

摘要

In this research work, a graphical programming will be carried out using LabVIEW to control the temperature of alcoholic fermentation in the manufacture of red wine, controlling a maximum temperature and a minimum temperature in the fermenter. The moderate consumption of red wine is very important for health since it contains many vitamin, mineral, antioxidant and polyphenol properties, etc. For this reason, it is important to obtain a good quality wine that preserves these important properties, and in this research work it would help to keep the temperature parameter constant in alcoholic fermentation in the red wine manufacturing process. This research was carried out at the Professional School of Agroindustrial Engineering of the National University of Moquegua, Peru. Using the front panel and the block diagram panel, the program has been made to control the temperature in alcoholic fermentation in the wine manufacturing process with the help of virtual instruments for temperature sensor, reading thermometer, cooling system, control of maximum temperature and minimum temperature in the fermenter. With which the operation of the system was achieved by connecting and disconnecting to maintain a constant temperature in the alcoholic fermentation of the wine.
