Mountains influence everything that happens on the Earth's surface; they guide the flow of humid air, create drying situations on the leeward side and condition the distribution of rainfall, influence the seasonal regime of river flow, generate large watercourses, provide resources of all kinds, contribute to the creation of cultures and the discriminate exploitation of the territory, have served (and still serve) as a refuge for some human societies, but also for plant and animal species, and are the origin of many foods that have been fundamental in the history of mankind.
