摘要

3D food printing technology enables the transformation of food materials from a fluid state into a three-dimensional structure by stacking layers. This technology harbors potential for personalized shaping, bespoke nutrition, and novel food processing approaches. However, the high moisture content and robust fluidity of many food materials, coupled with the absence of solidifying features such as photocuring and thermal melting, can often result in deformation, collapse, or flow of 3D printed products. To address these challenges, microwave 3D printing technology has been developed, capable of quickly solidifying materials during the extrusion process via targeted heating, thus enhancing the quality of printed products. This chapter concerns the development process of microwave 3D printing technology and equipment, its applicability with typical bulk food protein materials, and its future development trajectory.
