Effect of Microwaves on Food Carbohydrates

In this chapter, we explore the multifaceted role of microwaves in altering the functional properties and structural characteristics of carbohydrates in food. With a frequency range from 3000 MHz to 30 GHz, microwaves, despite their primary interaction with water, exhibit a secondary, yet significant, influence on carbohydrate structures. This indirect interaction triggers noteworthy changes in the food’s functional attributes, chemical composition, and intermolecular dynamics. The chapter further delves into the role of microwaves in improving the properties of soluble dietary fiber through microwave-assisted extraction. We also explore how microwaves facilitate more efficient extraction of polysaccharides and monosaccharides, hydrolysis of complex carbohydrates, and modification of starch properties. Although many of these techniques are still largely confined to the laboratory scale, the chapter emphasizes the potential for future optimization and wider applications, thus offering faster processing times and minimized impact on the chemical structures of food carbohydrates. By providing comprehensive analysis and insights, this chapter serves as a foundation for further research into the promising realm of microwave applications in food carbohydrate processing.
