摘要

Lactic acid bacteria (LAB) and yeast are pivotal microorganisms for the food industry due to their critical technological and functional characteristics. Furthermore, they are important microbial cell factories due to their potential to synthesize a range of industrially and metabolically active compounds. To increase their metabolite production potential, metabolic engineering applications for these important microorganisms have emerged and extensively developed in recent years The metabolic engineering applications of LAB include the production of nutraceuticals and high-value metabolites, certain food ingredients, and some commodity chemicals hereof. On the other hand, beyond traditional applications of yeast, the metabolic engineering applications of yeasts have been greatly expanded to understand some enzyme processes and produce high-value bioactive compounds such as carotenoids, polyphenols, oligosaccharides, and folate, etc. Herein, this chapter provides the metabolic engineering of LAB and yeast to produce compounds with industrial applications.
