Mustard Meal: Marching Towards Producing a Food-Grade Protein

The mustard plant is (Brassica campestris) mainly known through its oil which is extracted from mustard seeds and has a characteristic aroma and flavour. Mustard oil has a unique fatty acid composition and is one of the most commonly used oils in the food industry. In addition to mustard oil, mustard seeds itself are also used in many cuisines. The mustard meal is a by-product of the mustard oil process. Even though mustard meal has a fairly good nutrient composition, especially its protein content, it is mainly used in the livestock industry. Recently, the potential use of mustard meal has become popular in the food industry because of its advantages such as improving organoleptic characteristics of the products, gelling and emulsion stabilizing properties in addition to its amino acid composition.
