Chitosan and Its Applications as a Sensing Material

Chitosan is a natural polysaccharide with unique properties. It is biocompatible, biodegradable, and non-toxic. Chitosan is a major component in many industries, including water treatment, pharmaceuticals, food, and medicine. Sensors are promising devices due to their merits and applications. Sensors are fabricated from low-cost materials and have a high value in diagnosis, food protection, and environmental monitoring. They provide rapid, exact, and reliable information about the intended analyte. However, sensor’s properties depend on constitutive materials. Chitosan is a bioactive, biocompatible, non-toxic, and biodegradable polysaccharide used in several industrial sectors, including water treatment, pharmaceuticals, food, and medicine. Accordingly, this chapter is concerned with chitosan structure, properties, activities, production, and sensing applications.
