Oleogel Preparation Methods and Classification

摘要

Oleogels are prepared through a complex interplay of various factors such as the oil phase, the oleogelator, and processing conditions. Different preparation methods have been developed in the last decade, both as a way of widening the range of gelators that can be used to structure oil and as a way of modifying the final oleogel’s properties. Careful selection of the ingredients and the approach is essential to obtain an oleogel suited for a certain application. This chapter provides an overview of the different methods used for oleogel preparation, following the conventional classification of direct, indirect, and semi-direct. The direct methods section sheds light on the type of solubility mechanisms that drive the gelation process. The indirect methods section follows a historical perspective, explaining the gelation mechanisms behind each method and drawing attention to significant breakthroughs made from the initial development of each method. The semi-direct methods section features a theoretical and practical explanation of the only method known to date. This chapter also covers the extraction/production of oleogelators and introduces a new classification for oleogelation methods that consider essential aspects that are not covered by the conventional classification.
