Oleogel Characterization: Physical, Physicochemical, and Chemical Techniques

摘要

This chapter presents a comprehensive survey of analytical methodologies that are categorized into the domains of structure analysis, as well as chemical and thermal characterization, which are of paramount importance for examining and assessing the structures, behaviors, and stability of oleogels. The selected techniques range from simple ones that require no sophisticated equipment to more specialized ones that involve the use of non-environmentally friendly reagents and solvents. Each technique is described briefly, and interesting examples of their application to oleogels are presented. To evaluate the environmental and health impacts of each technique, the Eco-Scale’s penalty points system is used, taking into account the amount of reagents and solvents used, as well as the associated energy consumption. The Eco-Scale’s penalty points system emphasizes the importance of minimizing environmental harm and operator safety by selecting techniques with lower penalty points. This chapter highlights the need for researchers to be aware of the environmental impact of their analytical techniques or methods and encourages the use of eco-friendly alternatives wherever possible.
