Ultrasound as a Tool to Taylor Oleogelation and Oleogels Physical Properties
摘要
This chapter will address the recent use of ultrasound technology on oleogels. Two types of ultrasound will be covered, high-intensity ultrasound (HIU), and ultrasound standing waves (USW), as well as the mechanism of each one. The method of ultrasound application and the effect of this technology on the oleogelation process will be summarized. Moreover, the outcome of using ultrasound on the final physical-chemical properties of oleogels will be discussed.
