Food Texture Diagrams and Maps

Diagrams can help us visualise and understand the relationships between different things. In this chapter, we consider a range of diagrams and maps which relate to food texture. These are categorised as: non-map diagrams such as traditional butchery diagrams or scales; scientometric diagrams, which examine the relationship between texture and other scientific disciplines; ingredient maps; state diagrams; rheology maps; and sensory texture maps. We also consider the dimensions of food texture, as well as how texture changes during oral processing.
