Textural Aspects of Special Food for Dysphagia Patients

Dysphagia is a life-threatening swallowing disorder. Long-term treatment of dysphagia can be achieved by either rehabilitation or compensation. This chapter focuses on compensation in swallowing, through texture-modified foods and thickened fluids, as part of dysphagia management. We consider the classification of thickened fluids and texture modified foods along test methods to classify liquid/solid foods by clinicians as well as laboratory-based personnel.
