The practice of bioengineering can be traced back to antiquity; microorganisms were already exploited for their ability to address the needs and wishes of humans—in terms of food preservation (e.g., milk, fruits, vegetables) or in terms of food quality and diversity (e.g., beverages, cheeses, bread, pickles, vinegar), long before their formal discovery.
