The Bissap, a Beverage of Hibiscus sabdariffa: Production, Composition, Biological Activities, and Main Uses

Roselle is mainly cultivated for its calyxes, which are used to produce a popular drink in West Africa, bissap. The importance of bissap lies in its richness in polyphenols, which are used for medicinal purposes. This makes bissap a real treasure for its nutraceutical potential in the prevention of various chronic diseases. This work aims to contribute to the knowledge of bissap through its main constituents, their biological activities, and the identification of its main uses. Therefore, a synthesis of studies on bissap, its bioactive constituents, as well as their medicinal properties were investigated. The different works showed the use of bissap in the management of chronic and neurodegenerative diseases and virtues such as anti-inflammatory, antibacterial, antidiuretic, antifebrile, etc., activities were proven. Several consulted works have shown that the calyx constitutes the main valorizable part of the roselle and which allows the bissap beverage. It constitutes the basic ingredient for the manufacture of bissap. In addition, phytochemical analysis has identified the presence of organic acids, vitamins, and especially polyphenols, the most abundant of which are flavonoids and especially anthocyanins. The main anthocyanin responsible for the purplish-red color is delphinidin 3-sambubioside. In addition, the works revealed that bissap has medicinal properties (blood pressure reduction, cardioprotective, cholesterol-lowering, antidiabetic, anticancer, hepatoprotective, etc.). However, the published works do not define the dose of bissap to be effective. Thus, future research must focus on the efficient and nontoxic dose to be consumed in order to obtain the best use of this beverage.
