Cardiovascular diseases (CVDs) are the main cause of death worldwide. From 2025 to 2050, dietary habits, high blood pressure (BP), and high cholesterol are expected to be the major determinants of CVD. Specifically, in recent years, plant-based diets (PBDs) have gained importance, as evidence has consistently shown its potential benefits on health and the environment. Dietary guidelines across the globe advocate for adopting PBDs to alleviate the burden of chronic diseases and promote sustainability. However, whereas healthy PBDs, such as the Mediterranean diet (MedDiet), Dietary Approach to Stop Hypertension (DASH), portfolio diet (PortDiet), or well-planned vegetarian and vegan diets, have been associated with significant benefits for CVD and its risk factors, unhealthy PBDs—rich in low-quality plant foods such as refined grains, added sugars, sugary beverages, and ultraprocessed products (UPP)— have been linked to an increased risk of such diseases.
