The chapter discusses the role of local government in developing local food markets based on short supply chains (SFSC). Shortening supply chains is presented as an alternative to the globalized agricultural model, promoting healthy and organic food. The authors emphasize that local authorities can play a key role in incubating and supporting these initiatives, especially in overcoming organizational and technological barriers. Examples from Poland and other European countries show a variety of support models, from infrastructure to educational initiatives and promotion. The article pays special attention to the institutional model implemented in the Polish municipality of Kamienna Góra, which can serve as an example for other local communities to follow.
