While modern deer farming (particularly of red deer, Cervus elaphus) has perhaps gained a wider international perspective over the last 50 years, various species of deer have been held and managed under captive conditions for centuries for reasons of aesthetics, hunting, or food. This chapter will focus on (1) the history of captive husbandry of deer and (2) an international perspective of modern deer farming (with a particular focus on some of the main deer farming countries).
