Total Dietary Fiber
摘要
Dietary fibers are composed of a combination of various polysaccharides that perform distinct functions in the body, being classified as soluble and insoluble based on their solubility in water. In starches, fibers may be present in minimal amounts, below 0.5%, as during the extraction process, those that are insoluble are the ones that are most easily extracted, whereas the soluble ones are difficult to remove. Enzymatic–gravimetric methods are the most recommended for the analysis of dietary fibers in foods, including starches.
