For scientists developing new starch-based technologies, the fabrication of starch electrosprayed capsules is an innovative research area. This chapter outlines a general protocol for their production via electrospraying, noting that specific parameters (e.g., polymer concentration, voltage, and flow rate) vary. We describe these parameters for each starch source, including references for their effective use in producing starch nanocapsules.
