Terasi, a traditional Indonesian shrimp paste, is renowned for its rich and complex flavors, which arise from a diverse array of compounds. To enhance our understanding of terasi’s quality, it is essential to analyze these compounds systematically. Employing a metabolomics approach offers a detailed metabolite profiling that captures the full spectrum of substances present in terasi. This chapter provides an in-depth overview of the gas chromatography-mass spectrometry (GC-MS) workflow, a powerful technique used to identify and quantify the various compounds within the shrimp paste, thereby contributing valuable insights into its quality and flavor characteristics.
