Fluorescence and Chemiluminescence Assays in Food Analysis

Fluorescence and chemiluminescence are the recently emerging fields and their incorporation in the field of analytical chemistry, industrial and environmental sciences like the analysis of food can greatly enhance the potential of these procedures and the approach of food analysis for the availability of foods which are healthy for human health and nourishes the body according to its needs. This chapter focuses on the basic introduction of chemiluminescence and fluorescence, and the most common reaction involved. Additionally, it also focuses on the detailed procedures for the analysis of food for the estimation of its ingredients and contaminants i.e., liquid chromatography, high-performance chromatography, electrophoresis, etc.
