This chapter describes an in vitro digestion model to measure bioaccessibility of aflatoxins (AFs) in a simplified manner. The process of human digestion at oral, gastric, and intestinal levels is carried out in laboratory glassware to determine bioaccessibility of AFs B1, B2, G1, and G2 in rice and corn products. The model may also be used for evaluating permeability and stability of modified mycotoxins in the human digestive system.
