This chapter describes a methodology for determining the bioaccessibility of fatty acids in microalgae biomass. The methodology is based on the in situ transesterification process to obtain fatty acids, eliminating the need for the extraction and derivatization process of the algae oils, and reducing costs and analysis time. After the reaction, the extract obtained is analyzed by gas chromatography with mass spectroscopy to verify the fatty acid composition.
