Bioaccessibility of Amino Acids in Edible Microalgae Biomass

This chapter aims to provide a methodology to access the bioaccessibility of amino acids in microalgal biomass. The samples are submitted to a simulated gastrointestinal digestion process and evaluated using a Reverse-Phase High-Performance Liquid Chromatography (RP-HPLC) methodology to assess the composition of amino acids. The process of amino acid determination involves a step with a derivatization reaction of the samples to improve the identification and quantification of the compounds.
