Bioaccessibility of Minerals in Cassava (Manihot esculenta)
摘要
The objective of this chapter is to provide a methodology for evaluating the bioaccessibility of mineral constituents in cassava (Manihot esculenta). The samples are subjected to a simulated gastrointestinal digestion process and analyzed by inductively coupled plasma optical emission spectrometry (ICP-OES) to determine their mineral composition. The mineral determination process involves the acid digestion and absorbance to quantify sodium, potassium, copper, calcium, magnesium, manganese, and zinc.
