This chapter presents methodologies for detecting and quantifying dietary phenolic compounds in biological samples, including plasma, blood plasma and serum, urine, and feces. These methodologies are divided into three essential steps: (1) prepare biological samples to remove interfering particles; (2) extract analytes from samples and determine their concentration; and (3) analysis to detect and quantify phenolic compounds by LC-MS/MS.
