The use of fruit and vegetable waste (FVW) to produce fermentable sugars offers great potential in sustainable biotechnology and bioenergy generation. The fruit and vegetable processing industry produces 10–60% waste or byproducts in both solid and liquid forms. Sugar complexes present in fruit and vegetable wastes can vary, the complexes present in waste are cellulose, hemicellulose, pectin, and inulin, etc. This abstract discusses the numerous ways used to estimate fermentable sugars from agricultural wastes. The estimation of fermentable sugars from fruit and vegetable wastes can provide significant outcomes such as biofuel, biopolymers, the food and beverage industry, animal feed, and nutrition, by using the right sample preparation processes such as pretreatment of wastes, analytical methods, and enzymatic assay.
