The κ-end group carotenoids generally occur as minor components in complex plant extracts. In red pepper and some tropical fruits, however, they are among the main components, therefore these plants are excellent sources for isolation. Here we describe the methods for separation and characterization of κ-carotenoids. Their isolation involves partition of the extracts, bulk chromatography on silica gel or aluminum oxide, further purification on calcium carbonate columns, preparative thin-layer chromatography (TLC), and semipreparative high-performance liquid chromatography (HPLC). The κ-carotenoids can be identified using their retention properties on HPLC, mass spectra, UV/Vis, and nuclear magnetic resonance (NMR) spectra.
