Encapsulation of Food Bioactive Compounds Using PDMS-Based Microfluidic Devices

Microfluidics is a low-cost and easy-operation technique that can be used to design efficient delivery systems with well-controlled features (e.g., size and morphology). Herein, the basic aspects of microfluidics and the advantages are described, as well as what a beginning researcher needs to know before starting experiments using this technique. In this chapter, simple step-by-step guidance is provided on how the formulation of the delivery system, the construction of the microchip, and its operation can affect the features of the main structures designed from templates based on water-in-oil or oil-in-water emulsions, in addition to liposomes. Details are provided on how to produce and operate PDMS-based devices for a successful experimental design.
