Optical Tweezers to Probe Molecular Interactions at the Single Molecule Level
摘要
In this chapter we present a didactic description of the optical tweezers technique and the main approaches that can be performed with it for studies concerning intermolecular interactions, solutions, and colloidal systems. Many examples of applications in the field of food science are presented and discussed, demonstrating that the technique is a promising tool to investigate and optimize the products and processes associated to the food industry.
