LUMiSizer® is a handy equipment that can be used in food science to characterize the stability of liquid- and gel-based multiphase systems, allowing the analyst to obtain insights on quality control, shelf-life, and formulation improvements. Here, we describe a simple protocol to rank the kinetic stability of multiphase foodstuff, showcased by commercial milk samples from four different sources, but applicable also to other emulsions, foams, dispersions, etc. This experiment is accelerated by centrifugal forces and temperature. Instead of waiting for months, this protocol enables food formulators and quality controllers to get relevant insights on the physical stability of multiphase foods in hours, still reliably.
