Conducting a Microbiological Risk Assessment Using MicroHibro Toolbox

Quantitative microbial risk assessment (QMRA) is one of the three key components of the Risk Analysis process and provides a systematic framework for evaluating and mitigating the potential risks posed by microbial pathogens in foods. The complex nature of QMRA requires the development of software tools dedicated to different food actors, including researchers, practitioners, and users lacking mathematical programming background. MicroHibro is a user-friendly software, freely available online, for predictive microbiology and risk assessment in foods. Its features allow the design of sampling plans, shelf-life estimation, and the estimation of microbial responses in foods under reasonable foreseen conditions of processing and storage, besides the performance of risk assessments. This chapter presents a guide on how to apply the MicroHibro risk assessment module step by step. Through a structured process, users can perform a full deterministic and/or stochastic risk assessment, following the four main steps of QMRA: hazard identification, hazard characterization, exposure assessment, and risk characterization. A case study is also presented showcasing the features and usability of MicroHibro. This chapter helps in enhancing skills and knowledge on QMRA by providing guidance on the MicroHibro risk module, practical illustrations, and an understanding of software capabilities.
