After genomics and transcriptomics, proteomics represents the subsequent stage in the investigation of biological systems. The technical complexity related to the proteomic approach arises from the dynamic nature of proteomes, which exhibit variability not only among different cells but also over time, in contrast to the relatively stable genome of an organism. On the other hand, proteomics facilitates the discovery of a continually expanding array of proteins, which can exhibit fluctuations in response to specific cellular or organismal demands or environmental stressors. The study of proteomic food system is of fundamental importance for gaining molecular and structural insights into the composition of our diet, forming the basis of human nutrition. The advancement of proteomic analysis technologies has significantly augmented our knowledge of the protein components found in various foods, encompassing both the dominant proteins and those present in smaller quantities. Therefore, cell proteomics, which involves the comprehensive study of all proteins within cells, assumes a primary role in enhancing our understanding of the intricacies of the food system. It provides profound insights into the molecular processes that underlie food quality, safety, and nutritional value. This chapter explores the diverse applications of cell culturing and proteomics within the context of the food industry.
