摘要

Microalgae-derived lipids have been established as potential sustainable sources of edible oils and bioactive compounds, and non-targeted C12-NMR spectroscopy is a reliable method for verifying their quality and authenticity. This chapter provides an in-depth investigation of the principles, applications, and recent advancements in non-targeted C12-NMR spectroscopy for the authentication of microalgae-derived edible lipids. It highlights the benefits, challenges, and future directions of the technique in this dynamic field, and emphasizes the application of Nuclear Magnetic Resonance (NMR) technology to the characterization of metabolites and lipids in microalgae, emphasizing its qualitative and quantitative capabilities. This chapter also introduces metabolomics and lipidomics within the context of NMR technology, outlines protocols for metabolite isolation and measurement in microalgae, and emphasizes their potential for resource recovery and sustainable value-added product development.
