Molecular Structure Characterization of Starch

The physicochemical, functional, and digestibility properties of starch are greatly influenced by the characterization of the molecular structure. There is a correlation between little variations in the amylopectin structure and substantial variations in the functional characteristics of starch. The systematic design of starch-based products is heavily dependent on the development of appropriate methods for characterizing the structural features of starch components. Chromatographic methods have been investigated to characterize the structure of starch chains accurately. In order to accurately determine the starch structure, sample preparation and the solubilization process are crucial. Both starch components can be quantitatively eluted using the chromatographic system and the process for structural characterization of starches, which is effective for solubilizing starches. Following the solubilization of the starch samples, size exclusion chromatography or asymmetrical field flow fractionation is used in chromatographic columns to separate the starch components. Both of these separation technologies are frequently connected to pulsed amperometric, refractive index, and multi-angle light scattering detectors, which provide details on the structure and concentration of the starch constituents.
