Morphological Characterization of Starches

Starch particles prepared by different sources and processing methods have different forms, and the characterization of starch particles plays a crucial role in studying their interaction with other substances and exploring the application of starch materials. At present, there are many techniques to detect the morphological characteristics of starch, and the methods and procedures used in different laboratories may cause differences in the detection results of the same starch. Here, we examine the methods commonly used to evaluate the morphological characteristics of starch particles (such as optical microscopy, scanning electrical microscope, transmission electron microscope, polarizing microscope, confocal laser scanning microscopy, and atomic force microscopy) were described and the new detection methods in recent years were evaluated.
